Crab Cakes
A easy seafood treat. Great for lunch or light dinner.
You can substitute imitation crab meat in this recipe, but you loose the richness of flavor.
Ingredients
1 pound crab meat
2 eggs
2 Tbsp mayo
1 white onion, finely chopped
3 stalks celery, finely chopped
1 sweet red pepper, finely chopped
1/4 cup parsley, minced
2 Tbsp Old Bay Seasoning
1 cup bread crumbs
1/4 cup olive oil
1/4 cup corn meal
2 lemons, wedged
Directions
Drain crab meat.
In mixing bowl, combine eggs, mayo, onion, celery, red pepper, parsley, Old Bay Seasoning and bread crumbs.
Mix.
Fold in crab meat.
Form 10-12 patties about 3/4 inches thick.
Heat oil in saute pan.
Dredge each patty through corn meal.
Fry crab cakes over medium heat about 3 mins. on each side.
Serve with lemon wedges.
