cider mill pork roast

This is the perfect Sunday dinner in the fall! It doesn't take too long, and the scents while cooking are just amazing.

Ingredients
1 pork loin roast
cinnamon
onion salt
1 # pearl onions, peeled
1 # carrots, peeled
5-6 potatoes, peeled
apple cider - enough to come half-way up the roast

Directions
Rinse and pat dry the pork roast. Season with cinnamon and onion salt liberally on all sides, place in roasting pan. Add 6 - 8 of the pearl onions to the pan, then place in oven at 400' for 30 minutes.

Add the carrots and potatoes to the pan, then pour apple cider over all. Place lid on and turn the temperature down to 300' for another 30 minutes.

Baste with pan juices and add the rest of the onions. Allow to cook for approximately another 45 minutes, checking the vegetables to see how far along they are cooked. Check internal temperature of roast, it should be around 170'.
Allow the roast to rest for 15 minutes - you can make a nice gravy with the pan juices while it's cooling.
