cheesy potato soup
Quick and Easy Soup Recipe. Taste wonderful on a cold winters day.
Ingredients
2 10 oz. cans of Cream of Potato Soup (Campbell's)
1 10oz Block of SHARP Cheddar Cheese (Cracker Barrel)(cube 1")
4 Cups of milk ( any % okay )
½ tsp onion powder
1 package Wild Rice (Uncle Ben 90sec microwavable rice)
1 package real bacon bits (Hormel)

Directions
In a large pot place milk, cheese, onion powder, soup and ¼ of bacon bits bag.
Bring to a low simmer stirring constantly so cheese doesn't stick to the bottom of the pan.
Once cheese is fully melted, add rice and heat through. About a minute. Serve in soup bowl and garnish with bacon bits.
*TIPS:
If you want to get creative you can saute in EVOO (Extra Virgin Olive Oil) half a diced onion (medium sized white or yellow) and the half the package of bacon bits in a pan. Once onions are clear, pour into cheese and milk.
You can also make your own bacon bits by cooking a package of bacon and cutting it up. I've sauteed my onions in this grease and it taste wonderful.
It actually taste better this way but I like QUICK meals.
The original recipe takes about 20 minutes from start to finish. Add five minutes if you use the saute onions. 10 if you make your own bacon bits. Also you can use a box of Wild Rice and cook according to instructions, if you can't find the Uncle Ben's 90 sec Rice.
