braised kale & sausage
Delicious greens can be wonderful comfort food.
Ingredients
3/4 lb Kale washed and cut into 1 inch ribbons
1/3 cup red onion diced
2 cloves of peeled garlic finely cut
1 cup of chicken broth
1/2 lb of country sausage
2 Tbsp Butter
1/4 tsp pepper
dash of salt
1 cup of water
Directions
In a medium size pan add water, chicken broth, butter, pepper, salt, onion, and garlic. Bring to a low boil and add kale one handful at a time. Stir in and add more kale, continue until all of it is in your pot. Cook for 20 min or until to desired tenderness. If while cooking the kale begins to look low on moisture add water as needed. While the kale is simmering, cook the country sausage in a large skillet. Break up the meat into small chunks over med/med-hi until sausage is browned and crispy. Take out of skillet and drain on paper towels. The kale should be ready at this point. Ladle into bowls and add sausage over the top, sprinkle with parsley for a restaurant touch!
