Skillet Squash/Chicken Stir-Fry

One skillet wonder Ingredients 2 chicken breast, diced 2 medium yellow squash, sliced round about half inch thick 2 medium zucchini squash, sliced round about half inch thick One half of an onion, sliced julienne Olive oil Tbsp ginger 2-3 Tbsp Soy Sauce Salt & Pepper Directions In a large skillet, heat olive oil, add chicken and sprinkle with ginger. Add squashes and cook about 3-4 minutes. Add onion, salt and pepper, and soy sauce and cook about 2-3 minutes longer. Vegetables should be done but not mushy. Can be served with rice. Prep Time: 10 Min Cook Time: 15 Min Total Time: 25 Min Servings: 4
