Tropical Shrimp & Coconut Brown Rice

A taste of the tropics that is quick & easy. Ingredients 1 cup macadamia nuts 2 minced garlic cloves 1/2 15oz can pineapple tidbits, drained, liquid reserved 3 TBSP olive oil 1 dozen large cooked shrimp 6 servings instant brown rice 2 TBSP shredded coconut Directions Sauté one cup macadamia nuts, two minced garlic cloves, 1/2 can drained pineapple tidbits, and 3 TBSP olive oil. Cook 3 minutes. Add 1/8 reserved liquid from canned pineapple with one dozen cooked large shrimp. Sauté 3 more minutes. Serve with instant brown rice prepared with 1/8 cup reserved liquid remaining from canned pineapple together with water needed. Add coconut, mix and serve with shrimp. Prep Time: 10 Min Cook Time: 20 Min Total Time: 30 Min Servings: 6
