Mambo Mango Chicken

A tropical dish that is healthy and pleasing to the palate! Ingredients 1-1 1/2 lbs. thinly sliced chicken cutlets 1-2 mangos cut and cubed 2 T canola oil 2 tsp salt 1 bottle Fat Free Mango Dressing Directions Place thinly sliced cutlets into a Ziploc bag, adding a bottle of Fat Free Mango Dressing, oil and salt. In blender, place 2/3 of the mango and puree until it is mostly small chunks. Leave the other pieces (cubes) of mango aside for the dish when it is complete. Let cutlets marinade in Ziploc for a few hours or overnight. After, place cutlets on barbeque and pour marinade over cutlets. Cook cutlets on each side for approximately 2 minutes. Place cutlets on dish when they are done and add the additional mango that was left over on top of the cutlets.
