Chicken Enchiladas

Simple easy chicken enchiladas that can be made low fat or NOT! Children love to help make these. Ingredients 2 c. cooked cubed chicken 1 c. sour cream (may use light) 1 med. onion, chopped 1/4 t. salt and pepper 1 doz corn tortillas 2 c. cheddar cheese (reg. or light) 1 10 oz. can enchilada sauce Directions Stir first 4 ingredients together without breaking up too much of the chicken. Warm the sauce and dip the tortillas in to soften as you roll approx 1/4 c. filling into each one and place in 9 x 13" pan. Cover with remaining sauce and cheese. Bake in 350 degree oven for 25 minutes. Prep Time: 15 Min Cook Time: 25 Min Total Time: 40 Min Servings: 6
