Homemade Coconut Pie

Homemade Coconut Pie Ingredients 1 single pie crust 1 can flaked coconut (about a cup) and save a little to top off the meringue before baking 2 TBSP cornstarch or flour 1/2 cup butter 3 eggs (save whites for meringue) 1 tsp vanilla extract 1 can condensed milk 6 TBSP sugar Directions Preheat oven to 350F degrees. Mix all ingredients and pour into piecrust. Cover sides of crust with foil and bake for first 30 minutes. Take foil off last 30 minutes of baking. For meringue: take the egg whites and mix on medium-high speed until frothy and add 6 tablespoons sugar and mix until just fluffy not stiff. Spread on top of cooked pie, sprinkle with a small amount of coconut and bake about 5 minutes in 350F degree oven. ENJOY! Prep Time: 15 Min Cook Time: 1 Hr Total Time: 1 Hr 15 Min Servings: 8
