sweet potato pie
It goes without saying that sweet potatoes
have plenty of appeal. But they are downright delicious in this
scrumptious gourmet sweet potato pie. No matter how you slice it, this
recipe will be perfect for special occasions or no occasion at all.
Ingredients
2 cups mashed sweet potatoes
2 eggs, separated
1 (9 inch) unbaked pie crust
1/4 lb. butter, softened
1 cup packed brown sugar
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 cup evaporated milk
1/4 cup white sugar
1/4 tsp. salt
Methods/steps
Preheat oven to 400 degrees. In a bowl,
add the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger,
cinnamon, nutmeg and evaporated milk. Mix thoroughly. Whisk egg whites
until stiff peaks form; add 1/4 cup sugar and mix into sweet potato
mixture. Pour mixture into pie shell and bake at 400 degrees for 10
minutes. Reduce heat and bake at 350 degrees for 30 minutes or until
firm.
