rice dressing
Southern Rice Dressing compliments a variety of entrees.
Ingredients
2 pounds ground chuck
1 pounds ground pork
1 eggplant, cut up
3 bell peppers, cut up
5 stalks celery, cut up
2 yellow onions, cut up
4 cloves garlic, cut up
1 cup green onions, cut up
1/2 cup fresh parsley, cut up
2 cans mushroom steak sauce
1 stick butter
3 cups cooked rice
seasoning to taste
Directions
In glass bowl put celery, onions, bell peppers, and garlic with one stick butter. Cook in microwave on five minute intervals until they are wilted. While cooking vegetables in microwave, place 2 TBSP oil in a pan and add ground meat and pork. Cook until all pink is out. Add cut up eggplant, sautéed vegetables, and both cans mushroom steak sauce. Season to taste. Cook on low heat for 1 hour, or until eggplant can no longer be seen. Add green onions and parsley. Cook for 15 minutes longer until onions and parsley are done. Mix with cooked rice. Prep time: about 30 minutes. Cooking time: 1 hour. Makes about 12 large servings.
