sweet potato casserole

Mashed sweet potatoes with a coconut topping make for a delicious side.

Ingredients
1 cup sugar
1/3 cup butter
1 tsp vanilla
1/2 cup milk
2 eggs
3 cups mashed sweet potatoes (1 40 oz. can)
1 cup shredded coconut
1 cup brown sugar
1/4 cup melted butter
1 cup nuts (pecans)
1/3/cup flour

Directions
Preheat oven to 325F degrees. Mix sweet potato, sugar, butter, vanilla, milk and eggs together until well combined. Then, mix the coconut, brown sugar, melted butter, nuts and flour well and sprinkle on top of the potato mixture. Bake uncovered 35-40 minutes at 325F degrees.
