pear nut bread

This is a delicious, moist fruit and nut bread.

Ingredients
2 cups fresh diced pears
1/2 cup salad oil
1 cup sugar
2 eggs
1/4 cup sour cream
1 tsp vanilla
1 cup sifted plain flour
1 cup sifted whole wheat flour
1/2 tsp salt
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp nutmeg
1 cup chopped walnuts

Directions
Preheat oven to 350F degrees. Beat together oil and sugar until well blended. Add eggs one at a time. Add sour cream and vanilla; blend. Sift together flour, salt, soda, and spices. Add to sugar mixture and beat well. Peel and chop pears. Add pears and nuts to mixture with a spoon. Spray loaf pan well with cooking spray, pour in batter. Bake at 350F degrees for 1 hour or until loaf tests done (knife or toothpick inserted in center comes out clean). Let cool in pan for 10 to 15 minutes, then turn out onto rack and finish cooling. Notes: I double this recipe to make two recipes since it goes so fast at my house. You may substitute pears with bananas, apples, applesauce, etc.
