spicy apple-carrot-grapenut muffins

Healthy Treat for Breakfast or Snack

Ingredients
1 cup Grape-Nuts, ground into coarse meal
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1 Tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 cup brown sugar
1 cup skim milk
1/4 cup Egg Beaters
1/2 cup honey
1 Rome Beauty apple, peeled, cored and finely chopped
1 carrot, coarsely grated

Directions
Mix Grape-Nuts meal, flour, baking powder, cinnamon, nutmeg, ginger, cloves and sugar.
Add Egg Beaters, milk and honey. Mix well.
Fold in apple and carrot.
Spoon batter into greased or paper lined muffin tin.
Bake in preheated 425 degree oven for 12-15 minutes.
