Sweet & Sour Meatball Simmer
Put a simple tangy spin on meatballs and watch them disappear.
Prep.: 5 min./Total: 25 min.
Ingredients:
3/4 lb. (3/4 of 16 oz. pkg.) frozen prepared meatballs
1 med. each red and yellow pepper, cut into chunks
1/4 c. water
1/4 c. apricot jam
1/4 c. Kraft Catalina Dressing
2 tbsp. soy sauce
3/4 tsp. each ground ginger and garlic powder
2 c. Minute White Rice, prepared according to package directions
Combine all ingredients except rice in large skillet; cover. Cook on medium heat 10 minutes, stirring occasionally.
Increase heat to medium-high heat; uncover. Cook 8 - 10 minutes, or until sauce is thickened and meatballs are heated through.
Serve over the hot, cooked rice.
Makes 4 servings, 1 c. each.
Variation: For a quick option, substitute 3 c. frozen vegetables for the peppers. Just add during last 6 minutes of the final cooking time.
