Smarter Fettucine Alfedo
Skip the heavy whipping cream but keep the creamy taste in this classic dish.
Prep: 5 min. / Total: 20 min.
Ingredients:
8 oz. fettucine, uncooked
1 1/4 c. fat-free reduced-sodium chicken broth
4 tsp. flour
1/3 c. Philadelphia Light Cream Cheese Spread
3 tbsp. Kraft 100% Grated Parmesan Cheese, divided
1/8 tsp. ground nutmeg
2 tbsp. chopped fresh parsley
Cook pasta as directed on pkg.
Meanwhile, combine broth & flour in med. saucepan. Stir in cream cheese spread; cook 2 min., stirring constantly til mixture boils & thickens.
Toss pasta w/ sauce, 2 tbsp. Parmesan cheese & nutmeg. Sprinkle w/ remaining 1 tbsp. Parmesan cheese & parsley. Season to taste w/ black pepper.
Makes 4 servings, 1 c. ea.

How it is done: Instead of butter & cream, use chicken broth, flour & Philadelphia Light Cream Cheese Spread & reduce the amount of Parmesan cheese. These changes will save you 300 calories & 34 g. fat!
