Mini Pepperoni Pizza Quiches



This recipe is a fusion of classic pizza goodness and quiche comfort.

Ingredients

8 eggs

1/2 c. creme fraiche

1/4 c. heavy cream

1/2 tsp. black pepper

8 oz. shredded mozzarella cheese

4 oz. mini pepperoni

Directions

1 Preheat oven to 350 degrees F. Generously grease a 12-c. muffin pan w/ non-stick cooking spray.

2. In lg. bowl, whisk eggs. Add creme fraiche, heavy cream, and black pepper; stir to combine. Mix in the mozzarella and mini pepperoni.

3. Pour mixture evenly into muffin cups.

4. Bake 8 min., rotate pan, then bake an additional 5-8 min. til set & toothpick inserted in center comes out clean (safe internal temp. 160 degrees F.).

5. Allow to cool, then serve. Refrigerate leftovers.
