Beef & Broccoli



Prep: 25 min.; Cook: 20 min.; Makes: 4 servings (about 2 c. ea.)

Ingredients
1 tbsp. boneless beef sirloin steak or beef top round steak, ¼” thick, cut into thin strips
1 can (10 ¼ oz.) Campbell’s Condensed Tomato Soup
3 tbsp. soy sauce
1 tbsp. vinegar
1 tbsp. garlic powder
¼ tsp. crushed red pepper (optional)
3 c. fresh or frozen broccoli florets
1 c. regular long-grain white rice, prepared according to pkg. directions (about 3 c.)

Preparation
1.  Heat the oil in a 10” skillet over med.-high heat.  Add the beef and stir-fry til well browned.
2.  Stir the soup, soy sauce, vinegar, garlic powder and red pepper, if desired, in the skillet and heat to a boil.  Stir in the broccoli and cook til it’s tender-crisp.  Serve the beef mixture over the rice.
