Mini Oreo Surprise Cupcakes

Ingredients
1 pkg. (2-layer size) chocolate cake mix
1 pkg. (8 oz.) Philadelphia Cream Cheese, softened
1 egg
2 tbsp. sugar
48 Mini Oreo Bite Size Chocolate Sandwich Cookies
Equipment Needed:
Lg. mixing bowl
Sm. Mixing bowl
Hand mixer
Liquid measuring cup
Rubber spatula
¼ cup dry measuring cup
2(12-cup) muffin pans
Wire rack
Measuring spoons
Teaspoon (or sm. Rubber spatula)
Wire whisk
2 oven mitts
Table knife
Method:
1.       Preheat oven 350˚F.  Prepare cake batter in lg. mixing bowl as directed on package; set aside.
2.       Whisk cream cheese, egg, & sugar in sm. Mixing bowl til well blended.
3.       Scoop cake batter, using ¼ c. dry measuring cup, into ea. 24 paper- or foil-lined med. Muffin cups, filling ea. Cup about half full.
4.       Spoon ½ tbsp.. cream cheese mixture over batter in ea. Muffin cup.  Top w/ 1 cookie.  Cover evenly w/ remaining cake batter.
5.       Bake 19 – 22 min. or til toothpick inserted in center comes out clean.  Cool 5 min.; remove from pans to wrie racks.  Cool completely.
6.       Top cupcakes w/ whipped topping & remaining cookies just before serving.
Makes 24 servings, 1 cupcake ea.
Shortcut:  spoon cream cheese mixture into lg. resealable plastic bag.  Seal bag securely.  Snip sm. Corner of bag w/ scissors.  Squeeze about ½ tbsp.. cream cheese mixture over batter in ea. Muffin cup.
