Barbecue Meat Loaf

Ingredients

1 lg. egg, lightly beaten

1/2 c. stuffing mix, crushed

3 tbsp. 2% milk

2 tbsp. grated Parmesan cheese

1 tbsp. + 1/4 c. barbecue sauce, divided

1 lb. ground beef

Directions

  1. Preheat oven 425 deg. F. In a lg. bowel, combine egg, stuffing mix, milk, cheese and 1 tbsp. barbecue sauce. Add beef; mix lightly but thoroughly. Shape into 4-4x2" loaves in foil-lined 15x10x1" baking pan.

  2. Bake til thermometer reads 160 deg. F., 15-20 min. Spread w/ remaining barbecue sauce before serving.



Freeze Option: ndividually wrap cooled meet loaves in plastic and foil, then freeze. To use, partially thaw meat loaves in refrigerator overnight. Unwrap loaves; reheat in a greased 15x10x1" baking pan in preheated 350 deg. F. oven til heated thru and thermometer inserted in center reads 165 deg. F. Top w/ 1 tbsp. barbecue sauce before serving.
