Cheesy Chicken Simmer

A super-fast cheese sauce makes chicken and broccoli a dynamic duo. Prep: 10 min./Total: 30 min. 2 tsp. vegetable oil 4 sm. boneless, skinless chicken breast halves (1 lb.) 2 c. frozen broccoli florets 1 can (10-3/4 oz.) condensed cream of chicken soup 1/4 lb. (14 oz.) Velveeta Pasteurized Prepared Cheese Product, cut up 2 c. Minute White Rice, prepared according to package instructions Heat oil in large non-stick skillet on medium-high heat. Add chicken; cook 7 minutes, turning after 3-1/2 minutes. Add broccoli; stir. Stir in soup and Velveeta until well blended. Reduce heat to medium; simmer 7 minutes or until chicken is cooked through. Serve over the hot cooked rice. Makes 4 servings. Trim 5 g. fat and 20 calories per serving by using Velveeta Light Reduced Fat Pasteurized Prepared Cheese Product and 98% fat free, reduced-sodium cream of chicken soup.
