Garlic Parmesan Smashed Potatoes

 


Ingredients

  • 2-1/2 pounds small red potatoes
  • 8 tablespoons olive oil, divided
  • 1 cup grated Parmesan cheese
  • 4 garlic cloves, minced

Directions

  1. Preheat oven to 450°. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain.
  2. Drizzle 2 tablespoons oil over the bottom of a 15x10x1-in. baking pan; arrange potatoes over oil. Using the bottom of a glass or a potato masher, flatten potatoes to 1/2-inch. thickness. In a small bowl, combine Parmesan, garlic, and the remaining 6 tablespoons of olive oil; spoon over potatoes.
  3. Roast until golden brown, 25-30 minutes.
