Broiled Chicken Wings
2 lbs. chicken wings, split @ the joints
1/4 c. cayenne pepper sauce, preferably Frank's Red Hot, plus more for serving
1 tbsp. fresh lemon juice
3 tbsp. low-sodium chicken broth
3 lg. ribs celery, cut into sticks
1 recipe Blue Cheese Dip
Preheat the broiler.
Place wings in a lg. pot & fill pot w/ water to cover by about 2". Bring to a boil, & then combine to boil for 10 min. Drain.
Meanwhile, in a sm. bowl, combine cayenne pepper sauce, lemon juice & broth. Reserve.
Transfer wings to broiler pan & broil 5-6 min. from flame, til skin begins to blister & wings brown, 5-6 min. Turn wings over & broil 4-5 min. more.
Transfer wings to a baking sheet, drizzle w/ reserved sauce & toss well to coat. Place baking sheet under broiler for 1 min. to heat wings & sauce together.
Serve w/ extra hot sauce on side, celery sticks & Blue Cheese Dip.
